How it turned out
Great! They are chewy, moist, and super lemony. The icing adds a nice sweetness to balance the tartness of the cookies.
What I learned
Not all cookies are chocolate chip cookies. My rule of thumb for baking the perfect chocolate chip cookie is to pull it out of the oven before I think it's done. The cookie will continue baking and firming up. I tried this tactic with the lemon cookies, and it did not work. I learned I have to bake them until there is a golden ring around them. Otherwise they'll be a little floppy.
