How it turned out
I was impressed with how this first attempt turned out. It wasn't super fluffy and light, so there's definitely room for improvement. But overall, it was a simple recipe that yielded beautifully sweet bread.
What I learned
Needing more kneading. I think it didn't have the super stretchy gluten strands because I didn't knead it enough. I followed the recipe, but ultimately I think the stand mixer was just spinning the dough around instead of kneading. Next time, I think I'll do the 12 mins in the stand mixer, then add about 5 mins by hand until it passes the window pane test.
